How come we always crave what we can't have?

I liked Cotton-Ease before they discontinued it, but once they took it off the shelves, I became slightly obsessed with obtainning it.  I just couldn't accept that something I had taken for granted for years could suddenly be taken from me. (I think there's a lesson here)  I don't think I was alone.

Spinachquiche It's the same thing now with spinach.  I like spinach, but I don't buy it every week, but this week, I have really been craving it.  So much so that I planted some in the garden.  It grows very well in the fall here in Central Texas.  Spinach fresh from the garden is the best!  I prefer to cook mine which would kill any e.coli if I could only get my hands on some.  One of my favorite recipes to use spinach in is Quiche Avon.  I worked at a restaurant in Fredericksburg, Texas many years ago that served it and it was one of our most popular dishes.  The recipe is a bit different from the one I linked to, I use canned spinach if I don't have fresh and I always add ham to mine.  Serve it with a fresh salad and it's a great light meal.  It freezes very well and I usually make 2 - one to eat right away and one to freeze.  It also microwaves by the slice really well. 

I have a couple of knitting projects close to completion, but took a couple of days out to sew up a few things.  More on that later.  Oh, and Lion is bringing Cotton-Ease back.  Yeah, you heard me right, they are bringing it back AND in a new color range.  Doubt me?  Here is the name of the person at Lion that spilled the beans to a member of the Cotton-Ease Yahoo Group:

It's gonna be a couple of months, but there's no reason we can't let them know how much we appreciate their keeping their finger on the pulse of the knitting community.  Heaven knows, not every yarn company has ears for knitters.

I'm glad to hear that Lion Brand is bringing back Cotton-Ease. I didn't discover it until it had been discontinued and I couldn't believe I had missed knitting with this yarn when it was available.
I've been missing spinach too. Unfortunately here in MA the growing season has passed. Enjoy some for me!

Who knew such common things as spinach and cotton-ease could be so desirable? Maybe this spinach thing was a gift in disguise - makes us appreciate things that we normally take for granted.

I've never knit with Cotton-Ease, either. But there has been such a hubbub over it being discontinued, that I will HAVE to try it now that it's coming back. I think Lion is playing with us much the way Coca-Cola did in the 80s with "New Coke". Just creating a buzz for themselves.

You're right...I've never wanted spinach as much as I do now. A nice spinach salad with hard-boiled egg and bacon and cheese. Oh, no.

Yea for the return of cotton ease. Let's hope for nice colors. I too am missing spinach. I've taken my daily lunch of spinach salad for granted.

Yay! Cotton-ease! Of course I hear this right after I stocked up on it thanks to Smiley's sale (I literally just got the humongous box of cotton-ease a week ago).

I eat spinach every week - a couple times a week, usually - generally in the form of a big salad with fruit of some sort and walnuts. I feel like I'm in withdrawal..... If my backyard wasn't all clay, I'd plant some right now!

Spinach!! I've been craving a spinach salad with pecans and cranberries.
